Since cutting eggs and dairy out of my diet a few months ago, I have been in search for the perfect egg salad/tuna salad sandwich replacement. I've tried a few eggless egg salad recipes, but they have all been missing something. One day while reading The Kind Life, I stumbled across another blog called Papa's Toolshed Mama's Kitchen and I am now an avid reader. Arisa's recipes are simple and easy to make, not to mention the wealth of information she has about other recipes that she has tried out.
Then comes Arisa's post for her absolute favorite sandwich a few days ago, and it was like a lightbulb went off. Finally, this seemed to have been what I've been looking for since March. And sure enough it was! Introducing the best (vegan) sandwich ever.
This is a super simple sandwich to make with very few ingredients. The use of chickpeas is GENIUS! I can't decide what I love best about this sandwich. So let's list.
1. First and foremost, this sandwich is not trying to be anything it's not! It's a wonderful tasting alternative for veggies and vegans alike.
2. Texture: it has a wonderful texture from smashing. Some of it is creamy like hummus and you still get your chunks of whole to semi-whole chickpeas in the mix so you don't feel like you're eating baby food.
3. Taste!!! I love sweet pickled relish so I actually added 1/2 tbs more.
4. Ease: If you have a pretty well stocked pantry and fridge you'll be able to make this sandwich whenever the mood strikes.
